Hakka Style Spicy Bombay Chicken – Ft. Regal Very Hot Chilli Sauce

When it comes to cooking inspiration, this Hakka Style Spicy Bombay Chicken recipe is the perfect dish for a tasty weekend meal. Easy to prepare and packed full of flavour, you won’t be disappointed! 

Ingredients: 450gm boneless Chicken thighs

Marinade: All-Purpose Flour 3 tbsp. Cornflour 2 tbsp. Ginger garlic paste 1 tbsp. Red chilli powder. 1 tsp cumin powder. 1 tsp coriander powder. 1 tsp black stone flower powder. 1 large egg

Sauce: 2 onions, thickly sliced. Ginger-garlic-green chilli minced 2 tbsp. 3 green chillies, sliced curry leaves and a few tsps of Regal chilli sauce. Soy sauce 2 tsp (optional). Red chili powder 1 tbsp. White vinegar 1 tsp. Salt and sugar to taste and coriander to garnish

Method: Mix the marinade ingredients together with chicken thighs. Coat well and marinate for a minimum of 30 minutes. Then, deep fry the chicken pieces in hot oil until golden brown. 

Meanwhile, heat the oil and sauté the onion. Add the ginger, garlic and green chillies followed by the curry leaves. Add the vinegar and cook for a minute to get rid of the raw flavour. Next, add the spices and salt then add the chicken pieces. Mix together and cook on high heat for a minute, then lower the flame and continue to cook until combined.

 

Regal Garam Samosa Chaat – Ft. Tamarind Sauce & Bombay Mix

Nachos are a classic weekend snack, especially with a good movie or whilst watching sport. This recipe for Garam Samosa Chaat is a tasty alternative to nachos, combining samosas, chickpeas, salad with plenty of flavour. If you’re looking for some simple cooking inspiration, be sure to give this recipe a try. 

Ingredients: Chickpeas 480g. Cooking oil 3 tbsp. White onion 150g. Red onion, diced, 100g. Cucumber, diced, 150g. Lettuce, shredded, 2 handfuls. Dried coriander 1 tbsp. Cumin 1 tbsp. Crushed chilli 1 tbsp. Tomato ketchup 4 tbsp. Masala chilli sauce 3 tbsp. Tamarind sauce/imli sauce. 4 tbsp Yogurt. 2 tbsp Pomegranate seeds (optional). 3-4 Samosas. A sprinkle of Bombay Mix for a finishing touch.

Method: Firstly, heat the oil in a large frying pan. Then add the onion and sauté for a few minutes until soft. Then add the dry spices and chickpeas, mixing together. Next, add the ketchup and tamarind sauce. Leave to simmer for a few minutes. 

Leave to cool, then spoon the chickpea mixture into a large dish and sprinkle over the diced red onion and cucumber and shredded lettuce. Top with chunks of samosa and a drizzle of the tamarind sauce and a sprinkling of Bombay mix for a crunching finishing touch. Enjoy!

 

Regal Jerk Chicken Drumsticks & Lemon Chicken Thighs – Ft. Jerk Chicken Marinade & Lemon & Herb Marinade

Chicken drumsticks and thighs make a great weekend snack and can be quickly prepared, so are perfect if you’ve got friends and family coming over to watch the football! Make a change from crisps and dips and get some cooking inspiration with this delicious recipe for flavour-packed chicken. 

Ingredients: 1 pack of chicken thighs and 1 pack of drumsticks. Regal Jerk Chicken Marinade 4 tbsp. Lemon & Herb Marinade 4 tbsp. Cooking oil 3 tbsp. Cucumber slices, pomegranate seeds, lettuce and avocado (optional)

Method: Firstly, score the skin of the chicken thighs, then place the thighs and drumsticks in separate large bowls. Add the lemon and herb marinade to the bowl with the thighs and the jerk marinade to the bowl with the drumsticks and coat the chicken pieces evenly. Leave to marinate for at least 2 hours. 

Once the chicken pieces have been marinated, heat the oil in a large griddle plan (you might want to use two separate pans for the different chicken pieces) and fry the chicken pieces, turning regularly, until fully cooked. For a healthier alternative, you could cook the chicken under a grill, or if the weather is looking promising, why not cook on the BBQ! Then, once the chicken is cooked, sprinkle with pomegranate seeds and add the salad to the side.
