Creamy Regal Peri Peri Chicken Pasta
Ingredients
Chicken Marinade
1. 1 tsp Paprika
2. 1 tsp Cayenne
3. 1 tsp Black Pepper
4. 1 tsp Onion
Salt 5. 1 tsp Garlic Powder
6. 1/4 Cup of Peri Peri Marinade

1. Pasta
2. 2 tbsp Rapeseed Oil
3. 2 Garlic Cloves
4. 1 Medium Onion
5. Salt (To Taste)
6. 140g Tomato Puree
7. 2 tbsp Cream Cheese
8. Handful of Grated Mozzarella Cheese
9. 1/2 Cup of Double Cream
Method
1. Marinate the chicken in the above ingredients and set aside for 30mins
2. Fry the chicken in a non-stick pan and set aside
3. Boil your pasta and set aside
4. In the same pan, fry your garlic and onions until browned
5. Next add your tomato purée and stir the mixture
6. Then add your cream cheese and double cream until it’s combined well
7. Add in your handful of chose cheese and mix, once this is combined leave to simmer for a 2-4 mins
8. Add in your cooked pasta
9. Top with the cooked chicken and enjoy

Peri Peri Regal Niblets
Ingredients
1. Chicken Niblets (12 pieces)
2. 2 tsp Paprika
3. 2 tbsp Yoghurt
4. 1 tsp Turmeric
5. 2 tsp Garlic Paste
6. 3 tbsp Peri Peri Marinade
Method
Simply marinate the chicken in all the ingredients for 30mins – few hours. I left mine for around 4hrs. Popped them in the oven at Gas Mark 7 for a full hour and 15 mins and turned these halfway as I was short on time. I then placed them under the grill for 5 mins each on either side. I topped this with roasted red peppers and red onions.
