Quick and Easy Lunch Inspiration For Working From Home

When you are working from home, it’s easy to get stuck in a routine of unhealthy and convenient eating habits. A lot of home workers don’t make the time for lunch, instead choosing to do their work or take calls, but making time to have a lunch that is healthy and packed full of flavour is important, even when you are working from home. 

 

Workday lunches that are fast, tasty and healthy is important, but you also don’t want to be spending more than you have to in order to enjoy a delicious lunch. Making the most of what you have is important for both your budget and your food waste contributions, so with this in mind, here are some quick and easy lunch inspiration ideas for when you are working from home, that makes the most of what you already have in!

 

Re-Imagined Sandwiches

Sandwiches are a lunchtime staple, simply because they are easy to make, transport and eat. The possibilities are endless when it comes to sandwich fillings, but why not make your lunchtime inspiration even more interesting with some sandwich alternatives! 

Bruschetta

Bruschetta is a classic Italian dish, usually served as a starter or side dish. But, it also works perfectly as an open sandwich! To make, all you need are a few slices of ciabatta or sourdough, 1 clove of garlic, handful of mixed, ripe tomatoes, balsamic vinegar and a few leaves of basil. 

 

To make, slice the bread to your liking and then toast in a pan, making sure to rub each slice with a cut clove of garlic and drizzle with olive oil and salt and pepper. Slice the tomatoes, making sure to remove the core and seeds and pop them into a bowl. Lightly tear the basil leaves and, along with some Regal Himalayan Pink Salt and pepper and olive oil, mix together with the tomatoes. Once your bread is toasted, top with the tomatoes and a drizzle of balsamic vinegar. 

 

Be Sure To Make Well-Balanced Lunches

When you’re working from home, you want to ensure that you’re still eating and enjoying a well-balanced diet. It’s easy to get caught up in comfort food that’s quick and easy to prepare, but often this is lacking in the nutritional value that you need to fuel your body through the day, as well as lunch inspiration to make you actually want to eat! Jacket potatoes are a classic lunchtime meal, but if you want to add an interesting and balanced twist to this classic, why not try roasted sweet potatoes instead? Sometimes just adding a few simple, but different, ingredients to your dishes can make them much more enjoyable! To make a delicious roasted sweet potato lunch, you will need sweet potatoes (number depending on how many you want!), oil, paprika, pistachios, pomegranate seeds and feta cheese. 

 

You will need to prick the sweet potatoes and rub them generously with oil and paprika, then bake for around 45 minutes, or until the skin is crisp. To serve, cut the potatoes in half and top with feta and pistachios, alongside a side salad. If you want to increase the protein content, why not serve alongside a roasted salmon fillet or chicken breast, marinated in one of our delicious Regal marinades?

You can get as much lunch inspiration as you want, but if you spend your whole lunch hour cooking a delicious lunch, then this defeats the point! Omelettes are quick and versatile and you can use anything you have in the fridge to flavour or add to the texture. Frittatas are delicious and again, make the most of any leftovers you have in your fridge, from leftover roasted meats, potatoes, or veg that’s nearing the end of its shelf life. You can even replace bread wraps with thin cooked egg wraps instead!
